Pea Pancakes

Suitable for vegetarian diets.*

Makes 3 servings.

300 g peas
100 ml cream
35 g flour
4 Tbsp milk
2 eggs
30 g butter
cottage cheese if desired
smoked salmon if desired
onions if desired

Cook peas, strain, mash a little, and add salt to taste. Blend peas, one egg, one egg yolk, butter, milk, and cream. Add flour and blend until smooth. In a small pan, add oil and heat well. Spread the mixture across the whole pan.and fry on both sides until golden.
