North African Aubergine Salad
Suitable for vegetarian diets.*

Ingredients
0.75 kg

aubergine |
1cm slices 1/2 rounds salted &washed |
80 ml
|
olive oil |
2 lots of 40ml |
5 g
|
spanish sweet smoked paprika |
|
5 g
|
ground cumin |
|
55 g
|
ground coriander |
5g + 50g |
3 cloves
|
garlic |
|
20 g
|
lemon zest |
|
30 ml
|
lemon juice |
|
|
salt |
to taste |
|
pepper |
to taste |
Instructions
Rinse salt off aubergine and pat dry. Brush with oil.
Mix paprika, cumin & coriander together and rub into aubergine.
Spread evenly over an oven tray and roast 20 - 25 minutes until golden brown.
Cool.
Mix garlic, 2nd lot of oil, lemon juice and lemon zest, fresh corainader together.
Toss through spiced aubergine. Season to taste with pepper. Add salt if
necessary, CHECK first!
