Mushroom & Bean Salad

Suitable for egg free, onion free, vegetarian, and vegan diets.*

Makes 1.8 kg.

0.25 kg sultanas
0.75 kg mushrooms baby mushrooms, sliced
0.5 kg green beans sliced
0.03 kg parsley chopped
0.1 kg coconut shredded
sunflower oil for frying
0.01 kg yellow mustard seeds
0.06 kg sesame seeds
0.09 l lemon juice

Cover sultanas with boiling water. Combine mushroom, beans, pepper, parsley and coconut. Heat oil, add mustard seed, stir till pop. Add sesame seeds & lightly brown. Add to mushroom mixture with juice-drained sultanas. Toss lightly.
