African Black Bean Stew

Suitable for vegetarian diets.*

Makes 1.5 kg.

1 Tbsp sunflower oil
0.2 kg onions large, diced
0.25 kg carrots large, diced
0.2 kg capsicums red and green, mixed
1 tsp garlic chopped
1 tsp thyme
1 tsp paprika
1 tsp mixed herbs
1 cups liquid vegetable stock
800 g black beans cooked
salt to taste
pepper to taste
tabasco sauce to taste

Saute onion, carrots, capsicum, garlic & thyme & spices in oil for about 5 minutes (longer with big amount). Add stock bring to boil. Reduce heat to a simmer. Stir in the beans and season to taste with salt, pepper and tobasco. Cover and simmer until veges are tender, adding stock or water if needed.
