Easy, customizable frypan treat

Makes 3 servings.

2 cups flour
1 tsp baking powder
1 tsp sugar optional
salt pinch
2 eggs
0.5 cups milk approximately
2 Tbsp butter approximately

1/. Sift together dry ingredients. 2/. Beat eggs and milk in a separate bowl, then stir in the dry mix, adding water or milk as needed to make a thick batter. 3/. Heat a frypan and melt a knob of the butter. 4/. Ladel tablespoons of batter into frypan so they spread without touching. 5/. Cook on moderate heat till bubbles start to show and/or underside is golden. 6/. Flip and finish the other side. 7/. Remove and stack to keep hot, add butter to saucepan and repeat from 4. 8/. Serve hot with chosen toppings (such as lime juice, butter, honey, jam).
