The reason I keep a pack of flakey pastry in the freezer. Something super tasty you can make from fairly common ingredients.

Takes 30 mins.

Makes 6 servings.

0.5 flaky pastry thawed
The good stuff
1 Tbsp sunflower oil or any frying oil
1 onions diced
100 g mushrooms sliced, optional
4 cherry tomatoes chopped, optional
100 g broccoli chopped, optional
0.5 capsicums chopped, optional
100 g cheese grated
The cement
4 eggs
0.5 cups milk
1 tsp salt to taste
pepper to taste

If your flakey pastry is in a frozen block, take it out of the freezer to thaw so you can roll it later. It doesn't have to be completely thawed by the time you start, just soft enough to roll it out. Preheat the oven to 180°C without fan. Fry the diced onions in a bit of oil until they have glazed. Remove and set aside. Fry the sliced mushrooms in the same frying pan until they have release their water. Remove and put with the fried onions. Chop up and fry any other ingredients you'd like to include, like capsicum, tomatoes, broccoli, bacon or ham. Set aside with the onions and mushrooms and leave to cool. In a mixing bowl, beat the eggs, milk, salt and pepper. It should be enough to just cover the fried ingredients in the baking dish - add more eggs or milk as you need. Roll out the pastry. It needs to be big enough to line your baking dish. The thinner the better. Combine everything: Line the baking dish with the rolled out flakey pastry and scatter the fried ingredients evenly along the base. Pour the egg mixture over everything, top with grated cheese. Place the baking dish in the center of the oven, and check it after 20 mins. it's done once the dough and cheese go golden. Let it cool a little before serving.
