0.25 kg | carrots | large, diced |
0.2 kg | capsicums | red and green, mixed |
1 tsp | garlic | chopped |
1 tsp | thyme | |
1 tsp | paprika | |
1 tsp | mixed herbs | |
1 cups | liquid vegetable stock | |
800 g | black beans | cooked |
salt | to taste | |
pepper | to taste | |
tabasco sauce | to taste |
Saute onion, carrots, capsicum, garlic & thyme & spices in oil for about 5 minutes (longer with big amount). Add stock bring to boil. Reduce heat to a simmer. Stir in the beans and season to taste with salt, pepper and tobasco. Cover and simmer until veges are tender, adding stock or water if needed.
