Cook rice - just under cook, so it will take up more moisture when being baked. Heat milk/cream with sugars and vanilla bean, until a good flavour comes out of the beans.Remove bean pods and scrape out vanilla beans, putting the scraping back into the milk mixture. Combine milk and apricot mixtures then add cardomen, nutmeg and orange zest. Oil baking dishes and lay them 1/2 full with rice. Pour wet mixture over rice, making sure they get even amount of apricot etc. Allow a couple of hours for baking, adding more milk/cream if drying out too much.
