Ginger Ale

Refreshing zingy summer drink. Can be added to other cocktails to impart zing.

Makes 1 l.

Ingredients
Ginger Water
1 cups ginger root grated
2 cups water
Simple Syrup
1 cups water
1 cups sugar
Instructions

Blitz (or grate) the ginger and place in a medium saucepan. Add 2 cups of water and bring to the boil, then simmer for 5 mins. Remove from heat and rest for 20 mins. Strain through a sieve and discard ginger pulp. Place in a jar and refrigerate. Simple syrup is just equal parts water and sugar, so mix that up and refrigerate it also. For serving, mix 1 part simple syrup, 1.5 parts ginger water, 1.5 parts sparkling water, add a splash of lime juice and serve over ice.
