Super-tasty winter comfort food.

350 g | macaroni | |
2 | potatoes | peeled, 1cm cubes |
3 Tbsp | butter | |
2 | large onions | chopped |
200 g | bacon | diced |
200 ml | milk | |
350 ml | cream | |
350 g | cheese | grated |

Preheat the oven to 220°C (or 200°C with fan). In one pot, boil the cubed potatoes. In another pot, boil macaroni to al-dente. Fry onions and bacon in butter and set aside. For the cheese sauce, heat cream and milk in a saucepan, and bring to almost boiling point. Reduce heat and, while simmering, add about half of the grated cheese and stir until melted in. Add pepper and salt to taste. Once the macaroni and potatoes are cooked, drain and combine. Mix in one quarter of the grated cheese. Transfer the macaroni and potatoes into an even layer across a baking dish. Sprinkle the fried onoins and bacon across the top. Pour the cheese sauce evenly over the macaroni and potatoes to fill up the gaps. Distribute remaining grated cheese the top. Bake for 6-8 mins until the grated cheese has melted. Serve immediately with apple sauce.
