Simple bread recipe.
Takes 180 mins.
Suitable for vegetarian and vegan diets.*

20 g | fresh yeast | |
2 tsp | sugar | |
Dough |

750 g | flour | |
2 tsp | salt | |
275 ml | water | warm |
4 Tbsp | olive oil | |
100 g | walnuts | or other nuts, optional |
Glaze (optional) |

1 | eggs | beaten |
1 Tbsp | sesame seeds |
To make the yeast starter, mix water, yeast and sugar together and mix. Cover and leave in a warm place for 10 mins until it forms a frothy head on top. Mix flour and salt in a large bowl, plus any other ingredients, e.g. walnuts. Add olive oil and water to yeast starter and mix. Add yeast starter to flour and mix. Flour a clean surface and knead for 10-15 mins until it becomes springy. Oil the bowl and put dough back in the bowl. Cover with clingfilm or damp cloth and leave in a warm place until it has doubled in size (up to 2 hours). Preheat oven to 200°C. Remove dough from bowl and knock the air out of it. Shape into loaf-shapes and place into floured baking tins. If you wish, you can glaze the bread by brushing the dough with a beaten egg and sprinkling sesame or poppy seeds on top. Bake in the center for 25-30 mins, until golden brown.
