Versatile fritter recipe. Can be used for corn, zucchinis, chicken, onion rings, or whatever.
Makes 4 servings.
1 cups | flour | sifted |
1 tsp | baking powder | |
1 tsp | salt | |
1 tsp | sugar | |
1 | eggs | beaten |
0.5 cups | milk | |
1 Tbsp | butter | melted |
300 g | corn kernels | drained |
oil | for frying |
Sift all dry ingredients together (flour, baking powder, sugar, salt). Mix wet ingredients (eggs, milk, butter) in a separate bowl. Combine and mix until smooth. Add corn (or whatever it is you're frittering). Heat a decent amount of oil (0.5 cm deep) in a frying pan. Add several dollops of the fritter mix into the pan, and fry until golden. Turn carefully, and fry on other side. Once cooked, place on a paper towel to absorb excess fat. Serve hot.
