The simplest custard recipe we could find. And it works! (Original recipe by truebrit on geniuskitchen.com)
Makes 2 servings.
1.5 cups | milk | |
2 tsp | corn starch | can use corn flour instead |
1 Tbsp | sugar | |
3 | eggs | yolk only |
0.5 tsp | vanilla essence |
In a non-stick saucepan mix corn starch with a bit of milk to form a paste of dissolved corn starch. I usually add sugar before adding milk because my mum says it makes it less likely to form clumps (so far it worked). Add in the rest of the milk, and cook over moderate heat until it thickens and boils. Don't forget to stir. Remove from heat and cover so it does not form a crust. Separate egg yolks. If you are fast and efficient, you can do this while milk+corn starch are freshly on the stove (before they start to thicken). I suggest doing it before hand though. Whisk egg yolks, and then gradually add approximately half of the boiled corn starch sauce. This tempers the eggs. Then tranfer the whole lot back to the sauce pan, and bring to boil while stirring constantly. Remove from heat. Add vanilla essence. Serve with boiled apples or some random fruit.
