Simple recipe perfect for the pumpkin season!
Makes 4 servings.
1 | onions | chopped |
1 Tbsp | vegetable oil | for frying |
0.5 | pumpkins | peeled and chopped |
1 | potatoes | peeled and chopped |
1 | stock cubes | |
0.5 tsp | nutmeg | |
1 tsp | salt | |
pepper | to taste | |
1 Tbsp | sour cream | garnish |
parsley | garnish | |
1 tsp | pumpkin seed oil | make a to squiggle to garnish |
Fry onions in some olive oil in a medium saucepan. Add pumpkin and let it fry a short while with the onions to caramelise the flavour. Add potato and fill with boiling water until everything is just covered. Add salt and stock cubes, and simmer for about 15 mins until pumpkin is cooked through. Grate in nutmeg, and use a stab mixer or food processor to blend until smooth. Taste. Add salt and pepper if desired. Serve with sour cream and parsely garnish. Garnish also with a bit of pumpkin seed oil (if you have it).
