This simple 3C (curry coconut chicken) recipe really relies on the 3rd letter of the alphabet . khe he he. Bad pun intended. But the meal is delicious, and needs only basic ingredients to make :) (Modified from Roma's recipe on allfood.com) Served with rice (prepared with onion-- you eat less rice, and it has a nice sweet flavour)

400 g | coconut milk | |
100 g | coconut | optional, if you have some fresh coconut flesh |
400 g | canned tomatoes | precooked, diced |
200 g | tomato purée | |

1 cups | rice | 1/4 cup per person |
2 | onions | 1/2 per person, if you don't like onion, add smaller onions and more rice |
Season the chicken (salt and pepper) and set aside. Heat oil and curry powder in a large pan oven medium-high heat. After a couple of minutes, stir in onions and garlic, and cook 1 minute more. Add chicken and stirr or toss to coat with curry oil. Reduce heat to medium, and cook around 10 minutes, or until chicken is no longer pink in center. Pour coconut milk, tomatoes, tomato sauce and sugar into the pan, and stir to combine. If you have, you can add also chopped pieces of fresh coconut, and/or 1-2 teaspoons of sambal to add some heat. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes. Serve with rice (pro tip: boil it while the meal is simmering) and some lettuce. *** Rice recipe *** Chop the onions (1/2 per person), salt them, and fry on some olive or coconut oil until golden. Stir regularly. Add rice (1/4 cup per person because onions replace half the rice volume) and stir to coat it in oil. Then add water (double volume of rice), cover and lower the heat to low-medium. Simmer for 10-20 minutes, stirring regularly and trying the rice after 10 minutes. When it is almost completely cooked, turn off the heat and allow rice to sit and soak the rest of the juice/water.
