Black Bean & Avocado Salad

Suitable for vegetarian diets.*

Makes 2 kg.

250 g black beans cooked
150 g red onions chopped
288 g tomatoes chopped
150 g red pepper chopped
375 g corn
90 g coriander roughly chopped
180 g avocadoes chopped
150 g rocket roughly torn
1 cloves garlic crushed
20 g chilli finely chopped
30 ml lime juice
60 ml olive oil

Defrost corn. Combine blackbeans, finely chopped red onion, chopped tomato, corriander, garlic, chilli, lime juice, olive oil. Mix well. Add corn, avocardo and lastly torn rocket leaves.
