North African Aubergine Salad

Suitable for vegetarian diets.*

Makes 0.95 kg.

0.75 kg aubergine 1cm slices 1/2 rounds salted &washed
80 ml olive oil 2 lots of 40ml
5 g spanish sweet smoked paprika
5 g ground cumin
55 g ground coriander 5g + 50g
3 cloves garlic
20 g lemon zest
30 ml lemon juice
salt to taste
pepper to taste

Rinse salt off aubergine and pat dry. Brush with oil. Mix paprika, cumin & coriander together and rub into aubergine. Spread evenly over an oven tray and roast 20 - 25 minutes until golden brown. Cool. Mix garlic, 2nd lot of oil, lemon juice and lemon zest, fresh corainader together. Toss through spiced aubergine. Season to taste with pepper. Add salt if necessary, CHECK first!
