Potato Salad

400 g potatoes cut to 20mm cubes
20 g spring onions finely chopped
0.12 kg tomatoes diced 20 mm
0.18 kg green pepper 20 mm squares
0.18 kg red pepper 20 mm squares
35 g parsley chopped
10 g mint chopped
8 ml lemon juice
15 ml olive oil
salt to taste

Cook potatoes, cool and cut to 20mm cubes Chop spring onion fine Chop Parsley and Mint Combine all and chill Do onion free lot if required
