Easy to make, hard to screw up. One of my favourites.

Requires frozen blueberries, cooking chocolate, flour, baking powder, sugar, eggs, vanilla essence, milk and butter.

Lemon Meringue Pie

Fluffy sweetness out the outside, and tart lemony gooiness on the inside. Modified from Elsie Bauer's recipe on www.simplyrecipes.com

Requires flour, butter, salt, water, egg yolks, cornflour, sugar, salt, water, lemon juice, lemon zest, butter, cornflour, water, egg whites, lemon juice, vanilla essence and sugar.

Takes 40 mins.

Shepherds Pie

This is one of the dishes I missed when I moved to (continental) Europe. So I learned to make it myself.

Requires roasting potatoes, butter, milk, cheese, paprika, vegetable oil, onions, carrots, celery, peas, beef mince, flour, rosemary, thyme, liquid beef stock, worcestershire sauce and nutmeg.

Wähe

A typical Swiss fruit pie. Tasty, and very easy to make. The fruit can be of any sort. Apple, plum, cherry and apricot are typically used. A savoury version (Zwiebelwähe) can be made using two onions, bacon, salt and any other vetetables you like in place of fruit, sugar and hazelnuts, though you may want to fry some ingredients (bacon, onions, mushrooms) in advance.

Requires plums, ground hazelnuts, flour, salt, butter, water, milk, eggs, sugar and vanilla essence.

Gnocchi

Home-made gnocchi. Something impressive you can make with a few spuds, some flour, and an egg. Make a batch of it and freeze it for whenever.

Requires potatoes, eggs, salt and flour.

Pizza from scratch

Great for social gatherings. Prepare the dough, buy a bunch of toppings, and let your guests design their own.

Requires flour, yeast, salt, sugar, olive oil, water, tomato purée, oregano, tinned apricots, mozerella, mushrooms, onions, chicken breast, ham and tinned corn.

Takes 60 mins.

Mum's Apple Crumble

My mum's apple crumble recipe. Simple and tasty. Can be made with quince, rubarb, blackberry and/or apple, and is best served with vanilla ice cream. Was apparently invented during the 1st world war when people couldn't get flour. Is gluten-free if you can get gluten-free oats (sometimes it's mixed with barley).

Requires apples, honey, butter and oats.

Spaghetti Bolognese

This is the recipe which got me through uni. For a simple variation, add kidney beans and use as a nacho topping.

Requires spaghetti, olive oil, salt, vegetable oil, garlic, onions, mushrooms, bayleaves, beef mince, tomatoes, water, salt, sugar, oregano and parmesan cheese.

A bit tricky to get right, but with no added sugar and only 3 ingredients it's a delicious and light dessert.
